Onion and Parsley Relish
1/2 medium-size red onion, or 1 large shallot, thinly sliced
1/4 cup coarsely chopped fresh flat-leaf parsley
Combine the sliced onion and parsley in a small bowl and refrigerate the relish, covered, until you are ready to serve.
LYNNE'S TIPS
